Green Garlic Salad

These winters make sure you use Green Garlic to make your salads more flavourful

Ingredients:  

  • Tomatoes – ½ nos. chopped finely
  • Cucumber – ½nos. chopped finely
  • Microherbs

Dressing:

  • ½ cup chopped Green Garlic
  • ¼ th cup chopped coriander leaves
  • 1 or 2 green chilies, chopped
  • 1 tsp lemon juice
  • 1 tsp chaat masala powder
  • Salt or black salt as required
  • Sesame seeds

Par boiled:

  • (Safed Matar) White Peas – ½ cup
  • (Choliya) Fresh Green Chickpeas – 1/4th cup
  • (Kala channa) Black Chickpeas– 1/4th cup
  • Peanuts or Singhdana – 1/4th cup
  • Beetroot – 1 (sliced)
  • Methi leaves – 1 cup
  • Lettuce leaves (iceberg) – 1 bunch

Method:

Blend all the dressing ingredients till smooth in a blender or chutney grinder

Make sure that the par boiled ingredients (peas, choliya, kala chana, singhdana) stay warm. If using later – steam them again or microwave them for 30 seconds.

Toss the cucumbers, tomatoes, par boiled ingredients and green chutney together. Add more lemon juice if required.

– Serve cold or warm.
