Mango Mirchi Salsa (Old Monk Dressing)

Fresh mangoes tossed in Old Monk? Oh yeah!

 

For Old Monk Dressing –

Ingredients:

  • 1 cup Old Monk
  • 2.5 tbsp Sugar
  • 1 tbsp Butter
  • 3 Red chillies
  • 1/2” Ginger

 

Method:

Combine the old monk & sugar in a small pan & simmer till it is reduced to 1/4th of its original quantity.

Mix in the butter & continue to simmer till it is slightly thick & left with a few teaspoons of the dressing. Remove from flame & let it cool.

Deseed the red chillies, peel the ginger & finely chop the two of them. Mix them with the dressing & let it sit for half an hour for the flavours to infuse.

Old monk dressing

 

For Salsa –

Ingredients:

  • 2 Alphonso Mangoes
  • 1 Red Bell Pepper (medium)
  • 1 Red Onion (large)
  • 1 Capsicum (medium)
  • 1 tbsp Coriander (chopped)
  • 1 Lime
  • Salt & Pepper, to taste
  • Papad or crackers, to serve

 

Method:

Peel the mangoes & dice it to get medium size pieces

Dice onions, capsicum & bell pepper into slightly pieces compared to the mango

Mix the mango pieces, onion, bell pepper, capsicum & coriander in a bowl & refrigerate till it nice & cold.

When ready to use; mix the salsa, lime juice, salt, pepper & the old monk dressing. Serve it in a “fancy bowl” with some papad or crackers on the side & enjoy the summery burst of flavours.
