Pav Bhaji Pie

Ingredients

For Pav Bhaji

  • 2 cups Potato, boiled & mashed
  • ½ cup cauliflower, grated
  • 1 cup onion, roughly chopped
  • ¼ cup capsicum, roughly chopped
  • 1tbsp ginger-garlic-chilli paste
  • 2 tomatoes, pureed
  • 1 packet tomato puree
  • 1tsp coriander, finely chopped
  • 2.5-3 tbsp Pav bhaji masala
  • 1 tsp Kashmiri red chilli powder
  • 1 lime, juiced
  • 3tbsp Butter
  • 1/2tsp oil
  • Salt, to taste

For Mashed Potatoes

  • 2 big Potatoes
  • 2tbsp butter
  • 3tbsp cream/milk
  • Salt & black pepper, to taste

For Pav Bhaji Pie

  • Pav Bhaji
  • Mashed Potato
  • 4 Pav
  • 1 tbsp Butter
  • Mozzarella or processed Cheese
  • Coriander to garnish

Method

For Pav Bhaji

  • Heat butter & oil in a pan & add the roughly chopped onion & saute. After a few seconds add the ginger-garlic-chilli paste & cook till the raw flavour goes.
  • Add the cauliflower & saute for another minute. Now add the homemade tomato puree along with ready tomato puree (store bought) along with the mashed potato, pav bhaji masala, red chilli powder, salt & give it a mix.
  • Add 1 cup water, mix & let it come to a boil. Cover & simmer for 4-5 minutes.
  • When the water has dried & it is 80% on the drier side; add the capsicum & cook for half a minute. [keep it crunchy as it will be cooked while baking]
  • Squeeze the lime juice & sprinkle chopped coriander & mix to combine.

For Mashed Potatoes

  • Cut the potatoes into big chunks & add it to a saucepan filled with room temperature water. Season the water with enough salt & keep it for boiling.
  • Let it boil till the potatoes are completely cooked.
  • Drain & mash the potatoes immediately using a masher or a fork.
  • Pass the mashed potatoes through a sieve to get a completely smooth consistency.
  • Add the warm cream or milk along with melted butter, salt & pepper & mix using a whisk to completely incorporate. Cover & keep aside till ready to use.

For Pav Bhaji Pie

  • Slit the pav into two & apply butter towards the inside & arrange with the buttered side up on a baking or pie dish.
  • Pre-heat an oven to the highest temperature (approximately 230C) on baking mode.
  • Generously spoon the semi-dry pav bhaji over the buttered pav & flatten it with the back of your spoon.
  • Now spoon mashed potato over it & neatly flatten it into a thick layer with the back of your spoon
  • Grate cheese over it & be generous with it & bake for 12-15minutes or until the cheese is nice & golden.
  • Remove & let it cool for a bit, cut into pieces & serve or simply dig in.
