How lucky to have found fresh Kokum? Such a colourful fruit that makes a tangy & sweet sherbet.
- 100 gms Kokum Fruit
- 4 tbsp Sugar or Honey
- 1-2 tsp Lime Juice
- 1 tsp Cumin Powder (roasted)
- ¾ tsp Black Salt or Rock Salt
- 1 Bottle of Soda
- Few Sprigs of Mint
Cut the kokum fruit into half & with the help of a small spoon, scoop out the seeds & discard.
Grind the kokum with ¼ cup water till it is smooth.
In a small saucepan, boil the kokum pulp with sugar & cumin powder till it reduces & has a thick consistency. Once cooled down to room temperature, add black salt & lime juice.
In a sherbet glass, add a heaped tablespoon of the kokum pulp, few mint leaves & top it up with chilled soda & ice cubes.
You can strain the sherbet after adding the soda too.
If fresh kokum is unavailable; you can make it with dry kokum too.
